Crock Pot Monday: Chicken and 'Dumplings'

Last week's crock pot meal was Chicken and 'Dumplings'.

1 lb chicken breast
1 large can chicken broth
1 can cream of chicken (with herbs) soup
1 cube chicken bullion
1 can Grands homestyle biscuits
Optional: veggies like corn, peas and/or carrots.  I used frozen peas and carrots because I had them in the freezer :)

Cut chicken into 1 inch squares.
Combine chicken squares, broth, soup, bullion cube and veggies in crock pot. 

Cook (covered) on LOW for 6-8 hours. 

Cut Grands biscuits into squares, layer on top of the chicken mixture and cook (covered) on HIGH for ~20 minutes (until they are just beginning to brown). 

This turned out SO yummy!!!
Perfect comfort food for a fall evening.
